It has been 25 years since I started brewing sake without compromising my ideals.
I call the taste of Morishima, which I have sharpened numerically and sensitively, a "modern classic," and the next step I will take is Morishima 25+.
As a master brewer, I face the moment and continue to move forward every day, even if it is only by 0.1 millimeter, believing that my unwillingness to give up will lead me to a higher level yet to be seen.
